Sunday Brunch

We got to visit Colin and Morgan this morning! We all met up for brunch at Court of Two Sisters and spent some time walking around the quarter. Scarlett and Elle have a new best friend in Morgan! They both insisted on holding her hand the whole time.

Friday Night Sleepover

The girls have been begging to have a "sleepover" so I told them we could do it if it wasn't a school night. They were so excited! It lasted until 11pm when Elle woke up screaming because she didn't know where she was and Scarlett was crying "Elle said I hit her but I DIDN'T!!". Elle told me between cry breaths "Elle's bed!!!!". So, fun times!

First Day of School!!!

After a very long summer, it's finally here...the FIRST DAY OF SCHOOL!  Scarlett started PK4 and Elle started PK2.

Scarlett was so thrilled to get back to school and back to her friends.  Today was a short day, but she got to meet her teacher, some of her class mates and they got to sing a few songs and go out to the playground.  She starts full days on Monday!

I left Elle kicking and screaming this morning and I came back to her red rimmed eyes.  Her teacher said she cried off and on, but really enjoyed coloring and outside time.  She told us she had fun and smiled big when we asked about her friends.  She's going 5 half days and gets another go at it tomorrow.  Hopefully the tears won't hang around for too long!

29

I entered the last year of my 20's on Wednesday.  We didn't do too much to mark the occasion.  The girls and I went to Starbucks for breakfast (had to get my FREE drink!), then we had a playdate with Stephanie and Brooke.  Cameron got home before 6 (amazing!) so we had dinner - hot dogs, chips & macaroni salad - yuuum.  We found these organic hotdogs from Whole Foods that are amazing.  Anyway...  After dinner was presents.  I got lots of money, so I'm excited to start shopping!  The girls gave me an Itunes card to get US Weekly on my Ipad (I canceled my subscription when S was born and they started piling up without reading them.  With both girls in school this year I MIGHT get a little free time!).  Cameron's early present to me was my camera.  And they sent me flowers too!

Abbie's first haircut

Before & after....she looks so much better! And the groomer reported that she did really well!

Amazingly Delicious

I'm still on my new recipe pinterest kick. I wanted to share one that I made tonight that was SO good! It really impressed us all.

Skinny Chicken & Broccoli Alfredo

Prep Time: 10 minutes | Cook Time: 15 minutes | Makes: 4

Ingredients:

3 boneless, skinless chicken breasts, grilled and cut into chunks (about 2 cups)

2 cups roasted broccoli florets

8 ounces fettuccine (I used mini bowties)

2 tablespoons extra virgin olive oil

2 teaspoons minced garlic

2 tablespoons flour

1 cup fat-free, low sodium chicken broth

1/4 cup plain FAGE Total 0% greek yogurt

1/4 cup skim milk

1/4 teaspoon pepper

1 pinch ground nutmeg

3/4 cup freshly grated Parmesan cheese

Directions:

In a pot of boiling, salted water, cook the pasta according to package directions. Drain and set aside.

In a medium saucepan, heat the olive oil over medium-low heat. Add garlic and cook, stirring frequently, until the garlic is golden, 1 to 2 minutes.

Whisk in the flour until smooth, about 2 minutes. Gradually whisk in the chicken broth, Greek yogurt, milk, pepper and nutmeg. Bring to a low boil, stirring constantly. Lower the heat and simmer, stirring gently, until the mixture thickens, about 3 minutes. Stir in 3/4 cup Parmesan.

Add cooked chicken and broccoli to sauce mixture, followed by the cooked pasta. Toss to combine and serve with more Parmesan, if desired.

*I marinated the chicken in a little light Italian, then baked it & cut it up. For the broccoli, I cut up a fresh head of broccoli, drizzled with a little olive oil & garlic powder and spread it in a baking dish and cooked it at 375 until it was softened (20ish minutes).
